USDA Prime 極佳級

極佳級的牛肉取自42個月齡以下的年輕牛隻，具有豐富的大理石油花和柔嫩的肉質，香滑美味，很多高級餐廳和酒店都會用來炙燒、烘烤、火鍋或香煎等方式烹調。

Prime beef is produced from young, well-fed beef cattle. It has abundant marbling (the amount of fat interspersed with lean meat), and is generally sold in restaurants and hotels. Prime roasts and steaks are excellent for dry-heat cooking such as broiling, roasting or grilling.
